Vegetable Soup

SERVES 4

INGREDIENTS

1 small onion, diced
1 clove garlic, crushed
1 medium carrot, diced
2 celery stalks, thinly sliced
6 cups chicken stock
500g cauliflower, cut into florets
2 large zucchini, diced
150g green beans cut into thirds

METHOD

  1. Heat a large pot on high. Spray with olive oil and add onion and garlic and cook till soft.
  2. Add carrot and celery and cook stirring for 2 minutes.
  3. Add stock, cauliflower, and zucchini and bring to the boil.
  4. Add beans, reduce heat and simmer for 10 minutes.
