Molten Protein Chocolate Pudding: Soft, Rich & Packed with Chocolatey Goodness

Looking for a protein-packed dessert that feels like a proper treat? This Molten Protein Chocolate Pudding is the answer. Made with chickpea and oat flour, cacao, and a scoop of vanilla protein powder, it bakes into a soft cake with a rich, molten centre.

It’s easy to prep, bakes in under 30 minutes, and is perfect served warm with a scoop of ice cream, whipped cream, or a dollop of Greek yoghurt. No fancy tools or ingredients needed—just mix, bake, and enjoy!

Method:

  1. Mix the Batter: In a mixing bowl, whisk together chickpea flour, oat flour, cacao powder, GO Shake, baking powder, and salt.
  2. Add Wet Ingredients: Pour in the milk and syrup. Mix until smooth and lump-free.
  3. Assemble the Pudding: Pour the batter into a greased baking dish. In a separate bowl, mix the coconut sugar and cacao powder, then sprinkle evenly over the top of the batter.
  4. Create the Molten Centre: Gently pour boiling water over the top (do not stir!). This step creates the gooey, molten layer at the bottom once baked.
  5. Bake: Bake at 180°C for 20–25 minutes, until the top is set and the centre is bubbling and soft.
  6. Serve: Spoon into bowls while warm and serve with your favourite topping—ice cream, whipped cream, or Greek yoghurt.
