Molten Protein Chocolate Pudding: Soft, Rich & Packed with Chocolatey Goodness

Ingredients:
- ½ cup chickpea flour
- 1 cup oat flour
- ⅓ cup Tony Ferguson Organic Cacao Powder
- 1 scoop Tony Ferguson GO Shake Vanilla
- 1½ teaspoons baking powder
- ⅓ tsp salt
- ⅓ cup syrup or sugar
- 2 cups milk of choice
- ⅓ cup coconut sugar (for topping)
- Boiling water (for topping)
Method:
- Mix the Batter: In a mixing bowl, whisk together chickpea flour, oat flour, cacao powder, GO Shake, baking powder, and salt.
- Add Wet Ingredients: Pour in the milk and syrup. Mix until smooth and lump-free.
- Assemble the Pudding: Pour the batter into a greased baking dish. In a separate bowl, mix the coconut sugar and cacao powder, then sprinkle evenly over the top of the batter.
- Create the Molten Centre: Gently pour boiling water over the top (do not stir!). This step creates the gooey, molten layer at the bottom once baked.
- Bake: Bake at 180°C for 20–25 minutes, until the top is set and the centre is bubbling and soft.
- Serve: Spoon into bowls while warm and serve with your favourite topping—ice cream, whipped cream, or Greek yoghurt.
