Spiced Pumpkin Pie Chai Pudding

This Spiced Pumpkin Pie Chai Pudding brings together creamy chia seed pudding infused with vanilla protein and warm chai spices, layered with a velvety pumpkin (or butternut/sweet potato) pie filling.

Whether you’re enjoying it as a cosy dessert or prepping a few jars for the week ahead, this pudding is satisfying, nourishing, and packed with flavour.

Ingredients:

Chai Chia Pudding:

Pumpkin Pie Filling:

  • 1 cup steamed or cooked pumpkin (or butternut/sweet potato)
  • ½ cup plain yoghurt or coconut milk
  • 1–2 tablespoons honey, brown dates, or date syrup
  • 1 tablespoon nut butter

Method:

  1. Make the Chia Pudding:

    • In a bowl, combine the chia seeds, coconut water/milk, yoghurt, protein powder, honey, and spices. Stir well and let sit for 10–15 minutes (or refrigerate for a few hours) until thickened.

  2. Blend the Pumpkin Pie Layer:

    • In a blender or bowl, mash or blend the cooked pumpkin with yoghurt, honey or dates, and nut butter until smooth and creamy.

  3. Layer & Serve:

    • In a glass or jar, layer the chia pudding with the pumpkin pie filling. Repeat the layers if desired.

    • Top with extra sweetener, toasted nuts, or a sprinkle of cinnamon.
