These bars are perfect for snacking, dessert, or even breakfast on-the-go. Plus, they’re super easy to make and require no baking – just a few simple steps and you’ll have a batch of these mouthwatering bars ready to enjoy. 

Ingredients:

  • 1 packet Tony Ferguson Brown Rice Cakes, crushed
  • 1¼ cup smooth peanut butter
  • ½ cup melted coconut oil
  • ⅓ cup syrup or raw honey
  • 2 cups brown dates, soaked in hot water (drained, and blended with some salt and a little bit of milk)
  • Blueberries and raspberries
  • Melted chocolate to top
  • Cacao nibs

Method:

  1. Start by crushing the rice cakes and placing them in a large bowl. In a separate bowl, melt the peanut butter, coconut oil, and syrup together until smooth and well combined. Pour this mixture over the crushed rice cakes and mix thoroughly until everything is evenly coated.
  2. Line a square pan with parchment paper, then transfer the rice cake mixture into the pan. Use a spatula or the back of a spoon to press the mixture firmly and evenly into the pan. Place the pan in the freezer to allow the mixture to cool and set.
  3. While the rice cake base is chilling, prepare the date caramel by blending the soaked dates until smooth. If needed, add a splash of milk to help achieve a creamy consistency.
  4. Once the rice cake base has firmed up, remove it from the freezer and spread the date caramel evenly over the top. Then, scatter a generous amount of blueberries and raspberries over the caramel layer.
  5. Return the pan to the freezer for about 10 minutes to allow the berries to set slightly while you prepare the chocolate topping. In a microwave-safe bowl, melt the chocolate with a bit of coconut oil until smooth and glossy.
  6. Remove the pan from the freezer and pour the melted chocolate over the berry layer, spreading it out evenly with a spatula. Sprinkle cacao nibs on top of the chocolate layer for an extra crunch.
  7. Place the pan back in the freezer and allow the bars to freeze for at least 30-40 minutes, or until the chocolate is completely set. Once firm, remove the bars from the pan and slice them into squares or bars.
