  • 150g softened vegan butter or softened margarine
  • 100g brown sugar
  • 100g castor sugar
  • 1 flax egg (1 tbsp flax flour mixed with 1-2 tablespoons water)
  • 1 tablespoon vanilla extract
  • 200g self-rising flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons Tony Ferguson Cinnamon Spice
  • 100g Tony Ferguson Rolled Oats
  • 100g raisins



  1. Preheat your oven to 180°C and line the base of 2 baking trays with parchment paper, ensuring there’s enough space between each cookie for spreading.
  2. In a large mixing bowl, cream together the softened vegan butter or margarine until light and fluffy using an electric whisk or by hand.
  3. Add the brown sugar and castor sugar to the creamed butter and beat for a couple of minutes until the sugars are fully incorporated and the mixture is smooth.
  4. Prepare the flax egg by mixing 1 tablespoon of flax flour with 1-2 tablespoons of water until you achieve a thick, gel-like consistency. Add the flax egg and vanilla extract to the butter and sugar mixture, whisking until well combined.
  5. In a separate bowl, sift together the self-rising flour, baking soda, baking powder, salt, and Tony Ferguson Cinnamon Spice. Gradually add these dry ingredients to the wet mixture, stirring with a spatula until a dough forms.
  6. Once the dough is formed, fold in the Tony Ferguson Rolled Oats and raisins until they are evenly distributed throughout the dough.
  7. Use an ice cream or cookie scoop to portion out the cookie dough onto the prepared baking trays, leaving about 2 cm of space between each cookie.
  8. Bake the cookies in the preheated oven for 12-14 minutes, or until they are golden brown and set around the edges.
  9. Remove the cookies from the oven and allow them to cool on the baking trays for 5 minutes before transferring them to a wire rack to cool completely.
