Quinoa Stuffed Sweet Potatoes

Looking for a nutritious, flavourful, and satisfying meal? Look no further! These quinoa stuffed sweet potatoes are a perfect blend of wholesome ingredients and bold flavours. They’re easy to make and will leave you feeling nourished and energised. Let’s dive into the recipe!

Ingredients:

  • 3 medium sweet potatoes, steamed or boiled until soft
  • 1½ cups cooked white quinoa (prepared according to package instructions)
  • ½ cup roma baby tomatoes, sliced
  • ⅓ cup cooked corn
  • ½ cup butter beans or roasted chickpeas
  • Juice of ½ a lime
  • 1 tsp chipotle seasoning (substitute with BBQ or ground cumin/coriander/paprika and chilli flakes)
  • 1-2 tablespoons olive oil
  • Salt and pepper to taste

For the Chipotle Mayonnaise:

  • ⅓ cup Chipotle sauce
  • ⅓ cup mayonnaise
  • Salt and pepper to taste

Toppings:

  • Pickled jalapeños
  • Fresh cilantro
  • Sliced avocado
  • Chipotle mayonnaise

 

Method:

  1. Preheat your oven or air fryer: Set it to 180 degrees Celsius to ensure it’s ready for baking.
  2. Prepare the sweet potatoes: Slice the sweet potatoes lengthways, then dress them with a bit of oil, salt, and pepper. Place them in the preheated oven or air fryer and bake for about 15 minutes, or until they are tender.
  3. Prepare the white quinoa filling: While the sweet potatoes are baking, mix the cooked quinoa with diced tomatoes, corn, and butter beans or roasted chickpeas. Season with chipotle seasoning, lime juice, and 1 tablespoon of olive oil. Adjust seasoning to taste.
  4. Prepare the chipotle mayonnaise: In a separate bowl, combine the chipotle sauce and mayonnaise. Season with salt and pepper according to your taste preferences. Set aside.
  5. Assemble the stuffed sweet potatoes: Once the sweet potatoes are baked, carefully scoop out some of the flesh from the centre to create space for the quinoa filling. Fill each sweet potato with the quinoa mixture and return them to the oven or air fryer for an additional 5 minutes.
  6. Serve: Remove the stuffed sweet potatoes from the oven and top them with sliced avocado, pickled jalapeños, a dollop of chipotle mayonnaise, and fresh cilantro. Serve with lime slices for an extra burst of flavour.
