  • 500g boneless, skinless chicken breasts, cut into cubes
  • 2 tablespoons peri-peri sauce
  • 1 tablespoon Tony Ferguson Lemon Juice
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 large cauliflower, grated or processed into “rice”
  • Fresh parsley or cilantro, chopped (for garnish)

  8. Season the cauliflower rice with salt and pepper to taste.
